Transform chicken thighs or drumsticks with a savory & delightful sauce made of vermouth and chicken fat. Easy to assemble and bake, this makes for a great weeknight dinner and pairs beautifully with baked or roasted potatoes or roasted veggies.
Ingredients

Bone-in Skin-on Chicken - 8 drumsticks or 6 Thighs

3 Tbsp Chicken Fat, melted

½ cup vermouth - dry, not sweet
- 1 tsp herbes de provence

2 cloves garlic, minced

½ tsp onion powder

1 tsp salt, or to taste

pepper, to taste
Directions
Preheat oven to 375°
Whisk together all ingredients except chicken
Arrange chicken in a 9x13 baking pan
Drizzle herb & vermouth mixture evenly over chicken.
Bake at 375° until the juices run clear, about 45 minutes. If at any point the moisture at the bottom of the pan dries out, additional chicken fat can be added to avoid scorching.
